what is the difference between a double chine boat like this and a single chine?

Answer

The difference between a double and single chine is in the hull shape.
Think of a transverse cross section through the middle of a hull. Put simply, a single chine hull is basically a Veed bottom running out to to a more or less vertical side plate. A double chine hull has a veed bottom section, another more angled mid section and then a vertical side plate. This more closely approximates the shape of a round bilge hull form
